Persimmons

One Shinshu specialty is called Ichida Kaki Mille-feuille.
It consists of dried Ichida persimmons sandwiched with rich butter, and it is astonishingly delicious.
Unlike his grandmother, who loved persimmons, the fifth-generation owner is not fond of them—but he simply cannot get enough of this Ichida Kaki Mille-feuille.
For Yahata Sushi’s appetizers this autumn, Yuya has added persimmons to the menu.
The lineup includes persimmon shira-ae, persimmon and tomato Caprese, and persimmons marinated in olive oil—some offerings that are a little avant-garde for a sushi restaurant.

And when you try it, it is so delicious that you can hardly believe it is persimmon.
Our guests have responded very positively as well.
In fact, prepared this way, persimmons seem almost better suited to being served as a dish than as fruit after a meal.
Persimmons contain vitamin C, carotene, and potassium, among other nutrients, so they are good for your health as well as delicious—there is no reason not to enjoy them.
Yahata Sushi’s appetizers are served as an assortment of two or three items, and the selection may change, so even during this season, persimmons may not always be included.
But those are delicious in their own way too, so please look forward to them.
