Because Yahata Sushi is located in Waseda, we welcome a wide variety of guests from all over Japan through Waseda University.

When people gather for alumni reunions and the like, guests truly come from everywhere, from Hokkaido to Okinawa, as well as people who live overseas.

A guest who lives in Kitakyushu regularly sends us products from Kyushu.

The other day, a new flavor of Umakacchan instant ramen arrived!

It is a new mentaiko-flavored tonkotsu variety.

Yuya promptly made it for our staff meal on the very day it arrived.

As I have written before, although the fifth-generation owner does not eat ramen very often, he loves instant ramen.

Perhaps it is a reaction to not being allowed to eat it at home as a child.

In Yuya’s hands, even instant ramen is quickly transformed into restaurant-quality ramen.

It was finished with plenty of cabbage, paiko—slow-braised tender pork—and a soft-boiled egg.

Although it is tonkotsu ramen, the mentaiko flavor comes through clearly, giving it a real Hakata feel!

And the paiko is a perfect match.

Pork is rich in vitamin B, so it helps flush out excess salt, making it ideal even for the health-conscious fifth-generation owner.

I try to eat slowly, but it was so delicious that I finished it in no time again today.
