As the weather turns colder, tuna from the northern seas is coming into its own in terms of flavor.

Bluefin tuna from Oma Cape in Aomori Prefecture, on the Tsugaru Strait, is also becoming more delicious.

This Oma bluefin tuna was selected by the head buyer at Inayoshi Shoten in Toyosu Market.

Today, I photographed lean tuna nigiri seasoned with salt.
