Simmered Autumn Ayu as an Appetizer
One of the pleasures of Yahata Sushi is the small appetizer served at the beginning.

Although it is not listed on the menu, our younger chefs put considerable effort into preparing it.
Let us introduce one example of our September appetizers.
Starting from the right: fresh ginkgo nuts from Sobue.
On the left is simmered lotus stem.
And in the center is ayu sweetfish simmered in a sweet soy glaze.
Now that September has arrived, the ayu have finally become roe-bearing fish.
Ayu packed with roe are gently cooked until tender in a pressure cooker.
Topped with young sansho leaves, they offer an elegant aroma and flavor.
With our popular omakase nigiri, we serve an appetizer before the sushi begins.

The appetizer is served as an assortment of two or three items.
