Do You Know Bachiko?

Do You Know Bachiko?

The plectrum used to play the koto.

Bachiko gets its name from its resemblance to that shape.

In Japanese cuisine, the term refers to sea cucumber ovaries that have been shaped into triangles and dried.

However, even when we purchase several sea cucumbers, few of them have ovaries; most contain konowata (sea cucumber entrails).

Konowata is also a delicacy and delicious, but when we find the precious ovaries, we dry them to make bachiko.

This time, too, we have made beautifully shaped bachiko.

Its vivid orange color really catches the eye.

As it is a delicacy, please enjoy it a little at a time.

It is the perfect accompaniment to sake, but supplies are limited, so please forgive us if it is sold out!
