Bluefin Tuna from Okinawa Has Arrived

Okinawa may seem far removed from one’s image of bluefin tuna, but we occasionally receive it at this time of year, from May to June.

When you think of tuna from Okinawa, you may imagine something lean and light, but that is not the case.

I believe I have written about this before, but the bluefin tuna sourced by Yahata Sushi are large fish weighing over 100 kg. At this size, they swim at considerable depths, so even in Okinawa, they are said to be largely unaffected by the warm sea temperatures near the surface.

So, contrary to what you might imagine, it is neither watery nor lacking in flavor.

In fact, it is every bit as delicious as, if not more so than, tuna from Kishu or the San’in region at this time of year.

The lean meat has a full, robust flavor, while the toro has a fine texture and is richly marbled.

We offer it both fresh and zuke-marinated, so please enjoy the difference in flavor.
