A Fresh New Surface

It has now been more than 30 years since Yahata Sushi moved into its current building.

At the time, a relative who worked for a lumber dealer in Kiba selected the finest Taiwanese cypress for our new counter.

Our longtime acquaintance, Mr. Sasagawa, then applied a glass coating to it, and it has remained that way ever since.

The glass coating repels stains, but naturally it cannot prevent scratches, and the counter had become quite badly worn.

So, taking advantage of this holiday break, we asked a carpenter we know to plane it down.

It may be difficult to tell from the photo, but the counter has been reborn with a brand-new surface.

It feels wonderful to the touch, like caressing smooth skin.

The glass coating applied previously was allowed to penetrate deep into the wood, so it is still very effective.

We will continue to care for it properly, so that you can enjoy sushi at a beautiful counter for many years to come.
