The fifth-generation owner is not fond of garlic, so he does not eat Korean food very often. That said, it is not that he dislikes yakiniku—he likes it.
The reason he is not fond of garlic is that, no matter what dish it is used in, its presence is so strong.
When used merely as a subtle accent, it enhances a dish’s flavor, but if taken too far, it quickly becomes a garlic dish.
Of course, that can be delicious in its own way.
But whenever I cook, perhaps especially because I am a sushi chef, I want to bring out the flavor of the ingredients.
That is why I do not often eat dishes that use a great deal of garlic.
Also, ours is a business that serves customers.
That was a rather long introduction, but the staff meal that day was bibimbap.
You might say, “Well, you do eat it after all!”
But this was Saturday evening’s staff meal.
That’s right—the following day was our day off, so there was no need to worry about the smell of garlic.

But actually, the fifth-generation owner is not very good at eating from a bowl or mixing foods together.
So although someone had kindly made this bibimbap for me, before I knew it, I had eaten the vegetables first, then ate the rice at the end with the meat as a side dish.
Perhaps my habit of eating vegetables first was also a factor…
I seem to have done nothing but make excuses today, but in conclusion, it was a very delicious staff meal!
