Matsutake Mushroom and Pike Conger Dobin-mushi
September has arrived.
The days have grown considerably shorter since around the summer solstice, though the daytime sun is still very much summer-like.
Even so, the seasons are steadily changing.
This is the time of year when you can enjoy both summer fish and autumn fish.
And in the kitchen as well, you can enjoy summer pike conger and autumn matsutake mushrooms.
Speaking of matsutake and pike conger, of course: dobin-mushi.
Dobin-mushi, with its fragrant matsutake in a clear, flavorful dashi broth, is a specialty of this season.
Lightly blanched pike conger pairs particularly well with matsutake.
It also includes ginkgo nuts, shrimp, thin slices of kamaboko fish cake, mitsuba, and yuzu.
Please lightly rub the sudachi onto the rim of your small cup before enjoying it.
